It works great if the dough is soft.
I want to make pasta. And the dough has to be dry and hard.
Or the pasta won’t be cut separately and will cook mushy.
When I tried to make hard dough, it really tested the roller.
One day, it broke. The roller won’t roll anymore.

This roller works great, but it takes a little bit of getting used to. It is still easier than rolling out the dough by hand and much faster. However, I give this four stars instead of five because if you let the pasta touch the edges it will get black grease from the roller. However, with practice I found this not to be an issue. You also cannot submerge the roller to clean it, but that really does not make a difference for general clean up- just the overly greased rollers.

As a food blogger [...] that cooks mostly Italian food, I am so excited to have this pasta roller. I make a lot of homemade pasta, using the hand machine, which is a challenge as you need three hands, one to roll, two to grab. This makes the pasta making a zip zip, done deal. It’s easy to attach to the kitchen aid, easy to clean and easy to store. I just made a batch of lemon basil pasta with fresh basil. If you use fresh herbs, carefully monitor your move from one number to the next as the herbs may start to shred the pasta. Buckwheat pasta is the most challenging of all, and don’t go past number 4.
However, for most home recipes, you will be able to roll out very thin dough with no problems at all.

I purchased this pasta roller without the cutters, etc. because I just needed something to roll various doughs. You can use this for pizza dough and any dough that you need thin. The dough doesn’t stick and it works smoothly and is easy to clean. I use it with the Kitchenaid Pro Mixer because I think the added horsepower helps. Great product!!
